Directions
In a pan add following ingredients olive oil, diced onion, diced garlic sauté in a medium heat for 2 minutes.
In the same pan add all-purpose flour stir well and continue to cook at medium heat for 1 minute.
Add milk stir well and continue to cook at medium heat for 1 minute.
After that add following ingredients lemon juice, cayenne pepper, ground nutmeg, black pepper salt. Stir well and continue to cook at medium heat for 1 minute.
Add chopped spinach stir well and continue to cook at medium heat for 2 minutes.
In the same pan crack the 8 eggs and add one by one.
Cover the pan and continue to cook at medium heat for 4 minutes.
Sprinkle a tablespoon of feta cheese.
Serve immediately with choice of bread.
